Quinoa:

¾ cups quinoa, cooked and drained

Vegetables:

4 large carrots, halved and chopped

1 whole beet, sliced

2 tablespoons water

1 pinch salt

½ teaspoon curry powder

8 cups kale, chopped

½ cups cherry tomatoes, chopped

1 ripe avocado, cubed

¼ cup hemp seeds

½ cup sprouts

Dressing:

⅓ cup tahini

3 tablespoons lemon juice

1-2 tablespoons maple syrup

1 pinch salt

¼ cup water

How to Prepare:

Combine all the dressing ingredients in a small bowl.
In a salad bowl, toss in all the vegetables, quinoa, and dressing.
Mix them well then refrigerate to chill. Serve.
