No-Bake Chewy Granola Bars

¼ cup coconut oil

¼ cup honey or maple syrup

¼ teaspoon salt

1 teaspoon vanilla extract

½ teaspoon cardamominutes

¼ teaspoon cinnamon

Pinch of nutmeg

1 cup old-fashioned oats

½ cup sliced raw almonds

¼ cup sunflower seeds

¼ cup pumpkin seeds

1 tablespoon chia seeds

1 cup chopped dried figs

Directions:

Line a 6” x 8” baking dish with parchment paper and pop to one side.
Grab a saucepan and add the oil, honey, salt and spices.
Pop over a medium heat and stir until it melts together.
Reduce the heat, add the oats and stir to coat.
Add the seeds, nuts and dried fruit and stir through again.
Cooking Time: for 10 minutes.
Remove from the heat and transfer the oat mixture to the pan.
Press down until it’s packed firm.
Leave to cool completely then cut into 8 bars. Serve and enjoy.
